With Carnival around the corner your visiting friends and family will be expecting a lot of sun and relaxation before all the madness starts. A little treat to Maracas Bay this weekend will be a great way to kick off the Carnival Season.
Trinidad and Tobago has the sun, sea and sand, but one of our jewels in the crown is the savoury, Bake and Shark. There are many places that serve Bake and Shark at Maracas Bay and if it’s your first time eating this tasty sandwich remember to pack it tight with the free fresh salad and condiments. Try the Tamarind sauce, Garlic sauce and of course, Chadon beni.

Bake and Shark
Ingredients:
- 2 lb shark
- 1 lime or lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic
- 1 tablespoon green seasoning
- 1/4 scotch bonnet pepper
- 1 cup all purpose flour
- veg oil for frying (about 2-3 cups):
