23 Jan Recipe Of The Week: Fish curry in a hurry
You have made a meat curry and it was great, but now it is time to diversity things a little and create a flavourful Caribbean style fish curry! The Kingfish is mild in flavour and slightly firm, making it the perfect catch for this particular dish. It is not very labour intensive, which means more time to relax with your family rather than slaving over the stove.
You will need:
- 4 slices King fish (about 1.5 lbs)
- 1 onion
- 1 tomato
- 1 tablespoon Caribbean green seasoning
- 2 cloves garlic
- 3 leaves shado beni (or cilantro)
- 1/2 scotch bonnet pepper
- 1 cup water
- 4 tablespoon flour
- 2 tablespoon curry powder
- 2 tablespoon veg oil
- oil for frying the fish
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup bell pepper (optional)
- 1 scallion (green onion/spring onion)
- 1/2 teaspoon amchar masala
