01 Apr Seared Mahi-Mahi With Tomato Salad, Avocado Mousse, Passionfruit Beurre Blanc
Executive chef Khalid Mohammed of Chaud restaurant prepares this beautiful salad with dainty favours. Beurre blanc is French for “white butter” but this version, of course, has a tantalizing twist!
We are using Ocean Delight’s 8oz Mahi-Mahi Portion
Ingredients
Tomato Salad
- 4 oz. Tomatoes- any mix of colours and sizes
- 1 tsp. Garlic- puree
- 1tsp. Aged Basil Vinegar
- 3 tsp. Extra Virgin Olive Oil
- Fresh Herbs as desired
Avocado Mouse
- 4 oz. Avocado
- 2 oz. Heavy Cream
- 1 oz. Lime Juice
Passion Fruit Beurre Blanc
- 2 oz. Onion- finely diced
- ½ oz. Ginger- puree
- 1 cup Dry White Wine
- ¼ cup Heavy Cream
- 2 oz. Passion Fruit Pulp
- 3 oz. Butter
Directions
Mahi – Mahi
- 8 oz. seared 4 mins each side.
Tomato Salad
- Toss all ingredients together.
Avocado Salad
- Whisk all ingredients together.
Passion Fruit Beurre Blanc
- Reduce onion, garlic and ginger with white wine.
- Whisk in butter and heavy cream.
- Add passion fruit pulp.
